How are the permissions of the different Tabs? Same as in space or can a individual setting be done?

Tabs built with Composition work the same as any other page in Confluence.

However, you could use the Security and Encryption Macro to set highly-granular permissions at the tab level. This add-on is a great complement to any Confluence instance.
